Overview

About the course

This programme is ideal for School Leavers who want to pursue a career in the catering industry. This programme will develop the key skills needed for working in a professional kitchen.

  • Careers in catering and hospitality include a baker, catering assistant, catering manager, chef, head chef, sous-chef, hospitality manager and more
  • We work with prestigious employers, such as The Ritz, Heckfield Place and local employers
  • You will be helping run The Gallery, our on-site restaurant that is open to the public
  • You will have opportunities to take part in many competitions, from Jersey to London  
  • Learn from lecturers with experience from cruise ships to prestigious events

You will learn the main methods of cookery, producing meals and service skills. Your new skills will be perfected in our dynamic training kitchens and Gallery Restaurant, before progressing to our programmes at levels 2 then 3.

On this course, you will also study for the Certificate in Culinary Skills qualification and Food and Beverage Service. You will develop the skills required for practical activities within the kitchen and resturant, learning the foundation methods of cookery, producing meals and the service skills to work front of house. This will be carried out within our training kitchens and restaurant.

Your course

How will I be taught?

You will learn in our industry-standard commercial Gallery Restaurant. The restaurant is open to the public so you will gain real practical experience using effective communication and service skills to prepare, cook and present food to customers.

What modules are covered?

Some of the modules you will study at Level 1 include: 

  • Food safety in catering
  • Introduction to employability in the catering and hospitality industry
  • Preparation and cooking of food
  • Dealing with payments and bookings
  • Food and beverage service skills
  • Bar and hot beverage skills
  • Functional skills / GCSE English and maths

Your future

What Next?

You could join the Level 2 Food and Beverage programme, pursue an apprenticeship or look for employment in a catering setting that interests you.

Entry Requirements

What previous qualifications and experience will I need?

From School

  • Four GCSEs at grades 9-2
  • To include English and maths GCSEs 

From College

  • Entry level 3 qualification in English and maths or equivalent qualifications
