This qualification is aimed at you if you are looking to further your learning to become a pastry chef. This qualification is focussed on achieving the requirements around the patisserie and confectionary side with an emphasis on advanced skills.

You might have progressed from achieving a Level 2 qualification, but this is not a requirement.

Your course

How will I be taught?

You will develop your skills through a wide range of practical activities within our training kitchens, and will produce hot and cold desserts, breads and cake products in our Gallery Restaurant.

You will undertake topices such as:

  • Gastronomy
  • Advanced skills and techniques in producing pastry products
  • Understanding how to use supervisory skills
  • Produce dough and battered products
  • Produce petits fours
  • Produce paste products
  • Produce hot, cold and frozen desserts
  • Produce biscuits, cakes and sponges
  • Produce display pieces and decorative items
