About the course

This course is ideal for School Leavers who have completed a level 2 qualification in catering, and want to work as a senior chef.

This programme builds on your level 2 skills to start mastering more advanced cookery skills. As someone who wants to work as a senior chef, you will attend college two days per week. This means you will have time to gain valuable industry experience during the course.

You will learn in our industry-standard commercial Gallery Restaurant. The restaurant is open to the public so you will be gaining real practical experience using effective communication and service skills to prepare, cook and present food to customers.

Who is this programme for?

For those who have achieved The Level 2 Diploma in Professional Cookery. The Level 3 Diploma in Professional Cookery is a qualification which recognises student’s knowledge and skills to enable them to gain a suitable job as a Professional Chef.

Advanced Learner Loan

If you are aged 19 or over and are starting a course at level 3 to level 6 you may qualify for an Advanced Learner Loan from the Government which can cover the costs of your tuition fees.

Your course

How will I be taught?

You will learn in our industry-standard commercial Gallery Restaurant. The restaurant is open to the public so you’ll be gaining real practical experience using effective communication and service skills to prepare, cook and present food to customers.

What modules are covered?

  • The principles of food safety supervision for catering
  • Practical gastronomy
  • Advanced skills and techniques in producing vegetable and vegetarian dishes
  • Advanced skills and techniques in producing meat dishes
  • Advanced skills and techniques in producing poultry and game dishes
  • Advanced skills and techniques in producing fish and shellfish dishes

How will I be assessed?

Practical and theory assessments in all units are undertaken in college.

Entry Requirements

What previous qualifications and experience will I need?

This course is for students progressing from the level 2 course. As well as a relevant level 2 qualification, you will need a level 2 qualification (or equivalent) in English and/or maths.
